304 or 316? How to choose the right stainless steel pot for your family

Faced with a dazzling array of stainless steel cookware products, many consumers are confused about material choices: What's the difference between 304 and 316 stainless steel? Can 201 stainless steel be used? Does "expensive equals better" apply here?

304 stainless steel is the mainstream choice for household cookware. Containing 18% chromium and 8% nickel, it is classified as food-grade stainless steel. It does not release harmful elements under normal cooking temperatures, offers excellent corrosion and heat resistance, and remains relatively cost-effective. For the vast majority of households—frying, sautéing, boiling, and deep-frying—304 stainless steel's performance is more than sufficient.

316 stainless steel adds molybdenum to the 304 formulation, enhancing its resistance to chloride ion corrosion. It is commonly used in medical devices, food processing machinery, and marine engineering. From a performance perspective, 316 stainless steel is indeed "over-engineered" for everyday household cooking, yet costs roughly twice as much as 304—making it an unnecessary choice for most home kitchens.

Worthy of caution is 201 stainless steel. Grade 201 is not food-grade material; it performs poorly in corrosion and heat resistance and may release certain metal elements harmful to human health when in contact with food or subjected to high temperatures. Some stainless steel cookware products currently on the market, priced far below normal manufacturing costs, risk using 201 stainless steel as a substitute for higher grades—consumers should be vigilant.

Precautions for using stainless steel cookware are equally important for safety and longevity: Avoid storing salt, vinegar, soy sauce, or other salt- and acid-containing foods in stainless steel cookware for extended periods, as chloride ions may penetrate the protective film and cause corrosion. Avoid dry heating, as stainless steel's relatively low thermal conductivity may cause the surface chrome layer to age and flake off. When cleaning, avoid strong alkalis and strong oxidizing agents (such as alkaline water or bleach), which may cause electrochemical reactions that erode the cookware.
